A gathering to celebrate the region’s best provenance and mark the start of the 2026 Grampians Wine Festival. Five regional vineyards will discuss specific pairings between their selected wines and food tailored by the award-winning team at Block & Cleaver.
Enjoy the story behind the menu curated by Executive Chef Dean Sibthorp, alongside pairing notes from the winemakers, while taking in the Grampians backdrop.
Five tasting courses served in the style of ‘Iris’s’ chef canvas menu. Canapes on arrival followed by three savoury courses and a dessert to finish. This offers a snapshot of the produce available based on the season and surroundings.
After dinner, wines will be available for purchase, with an opportunity to discuss where to buy the selected wines on show as well as other vintages and varietals.

Underground Dining at Seppelt Great Western invites you into one of Australia’s most remarkable wine settings, where heritage, atmosphere and regional flavour come together deep below the vines.
The evening begins in the Shaft House with a glass of Seppelt wine and a relaxed charcuterie service featuring local cheeses, smallgoods and seasonal accompaniments. It is a chance to settle in, take in the surrounds and ease into the night before making your way beneath.
From there, you will be guided into the historic Drives, a labyrinth of hand-dug underground cellars dating back to the 1860s. Cool, quiet and steeped in history, this is where the evening truly begins.
Led by Executive Chef Bryden Buckingham, the dinner features a chef’s choice three-course menu shaped by the season and the best of the region. Bryden’s produce-first approach brings generosity, character and a strong sense of place to the table, with each course thoughtfully paired with Seppelt wines.
Seated together beneath the surface, surrounded by the very wines being poured, this is a dining experience that feels intimate, atmospheric and unmistakably Great Western.
More than a dinner, Underground Dining is a celebration of regional produce, historic cellars and the craft of bringing people together around food and wine.

As part of the Grampians Fine Wine Festival, Salingers is bringing together two things that were always meant to be enjoyed together – freshly made pizza and great cool-climate Pinot.
For one Friday night only, settle in at Salingers with a special pizza menu created to enjoy alongside Seppelt Drumborg Pinot Noir and Seppelt Drumborg Pinot Meunier.
Both wines come from Seppelt’s Drumborg Vineyard in the cool climate of south-west Victoria, giving guests the chance to enjoy two different expressions of the Pinot family side by side.

As part of the Grampians Wine Festival join us for the second edition of Blacky’s Bottles.
Grenache is one of the most widely planted varieties in the world, and one of the most misunderstood. At its best, it’s an absolute joy — bursting with red fruit, warmth and spice. At its most expressive, it can be rich, complex and utterly compelling. Thin-skinned and heat-loving, Grenache thrives in warm, dry climates and has a long and proud history in Australia, particularly in the Barossa and McLaren Vale. But it’s now being grown and crafted beautifully right across the country, and the results couldn’t be more different from one producer to the next. It is especially well suited to the Grampians due to our warm days and cool nights during the ripening season and generally dry conditions.
We’ve gathered a collection of Australian Grenaches and instead of enjoying them one by one, we thought it’d be far more fun to line them up and compare. So whether you know your Grenache well or you’re just curious to find out what all the fuss is about — here’s your chance to taste a great selection all at once.
We’ll talk you through each wine, there’ll be plenty of opportunity for questions, and some delicious food to enjoy alongside the tasting.
